I would choose brome or orchard with alfalfa but not both. I like a late maturity orchard personally. I would not worry about stem size but instead go with a leafhopper resistant variety. Pioneer has a variety that ends in 94H that I've tried and works well. Nexgrow (Garst) 6480H is another good choice in our area.
