Is Spelt certified gluten free? How is the consistency of bread made with spelt? Does it hold together well or is it crumbly? Most wheat free baked goods are difficult to eat without it falling apart. My wife has Celiac and I have a wheat intolerance so all food in our house is gluten free. My wife is a very good cook and is always looking for a new gluten free product to try out.

Edit: My wife looked up spelt in her gluten free 'bible' and found out spelt is NOT gluten free. Spelt is a more digestible form of wheat but NOT gluten free.
