Hello,

I've been deep frying turkeys on Thanksgiving for about 5 years now with good success. This year I am replacing my old aluminum pot (32 quart?) with a 42 qt stainless steel one. The diameter is large enough that I could deep fry it in the 'flat position' as opposed to vertical as I have done in the past? It would take much less oil to cover it in the flat position.

Can I do it? Any recommendations? I'm thinking about lowering and raising it vertically for safety/ air entrapment/ oil drainage reasons, but would cook in the flat position. Any reason not to do this? The turkey is 12 pounds.
