Lots of Ranching on the "Big Island" . . . . . Long with coffee and nuts.

Assuming you are flying from Big Island to Oahu to catch ship for cruise, Pearl Harbor is a must. With the cruise, you don't get much time on shore - be darned sure to sign up for your shore excursions early and if you want to rent a car, do it early, as they can run out or have very, very limited selection (small compacts that don't necessarily fit bigger farmer types). Oahu has seed corn on the west / south west of Honolulu.

Maui has Cattle, pine apple, some sugar cane (discontinued plantings last season), nuts and coffee.

Kauai has coffee (free coffee plantation self guided tours and samples), seed corn, nuts, cattle and fruits/vegs. It's an easy island to get around on with a car and far less people / vehicles.
