north central Iowa, Hampton
Is this unstained, unfinished entirely?

If so, I'd probably use a rag with lacquer thinner to take off the grease, then block sand with something like 400 grit paper to get back to a fresh surface. Apart from the body oil, the whole thing is going to have some dust, dirt, grime after being in use for that long.

Wipe down with a tack rag, stain, sanding sealer for a coat and then 2 or 3 coats of a poly sealer, wet sanding in between.

That process is going to get you a very durable finish, which is what I use on cabinetry projects. And yes it is kind of a lot of work.
Good luck.
