+1 on pressurizing the pex.  Plumb in a  gauge, pressurize the system and let it sit for several days to be sure there is NO leak-down.
Even thought pex is pretty stiff I'd leave it pressurized during the pour. 

As suggested, I would put plastic on the walls up a few feet or you will have concrete splatter on the steel.
