Yeah, I'm curious how they came up with that number. Doing some quick searching I found this from NRCS:

Which, if using their example, would spell out 1.8 acres per cow. How accurate that is... I have no idea. What I couldn't readily find was how many pounds of beef you get off a cow from the sources VeganStreet cited. I did find this which suggests 414 lbs from a 1000 lb steer:

So balancing between NRCS's 1200 lb cow and OK's 1000 lb steer, I come up with around 331 lbs per acre. Hardly scientific and a lot of assumptions though. I'll also add that I work with hay and am pretty well clueless about cattle. Still, there's a lot of room for error in numbers like these and I'd wager VeganStreet is using the worst case numbers for beef while showing best case for their fruit and veggies.

Still, like others have pointed out, this isn't comparing tomatoes to potatoes. The land used for raising feed is often not used for raising fruits and vegetables. By all means, I'd love to see them raise those crops in someplace like Kansas or Oklahoma and see if they still get optimal yields. They're also completely ignoring the nutritional differences between the three. IE, a pound of potatoes is not the same, nutritionally, as a pound of beef.
