It is really used just as a big heavy stock pot. We have a 3/16 stainless plate between the burner and the pot. It is on a turkey fryer stand. After washing the ears they go into the fry baskets. They hold between 20 and 30 ears depending on size. He drops the loaded basket into boiling water. When blanching is done, the whole basket is placed in the first cooling tub. He will lift and dunk the basket several time to get cool water through the basket and ears. After the pot boils about a minute, he dumps ears into second tub and refills the basket with new ears. The second tub is emptied of ears before bumping the basket into it. Cool water introduced second tub. A siphon tube moves water from one tub to the other. This way coolest water is in the final tank. The other tank gets fairly warm, but gets the hottest corn. We removed the drain valves an installed stand pipes to the tanks don't over flow. Also warmest water is on top and this warm water is what drains away. It takes three people cutting corn to keep up with him.

The pressure canner was bought about 10 years ago. I can not remember the brand. It will pressure can 14 quart jars at a time. You put seven in the bottom then another plate and then another seven jars. You have to watch the turkey fryer closely as it can't rattle enough steam when on high.
