Subject: cover crops' nutrient uptake

i'm sure this has been covered here before, so sorry for asking.

Seen quite a few cover crops get pretty tall and even heading out some. At what point does that crop begin taking up enough nutrients to potentially hurt the "real crop"? Nutrients will obviously be given back and made available eventually, probably the next crop year?

Just been wondering.
