...you may have a box that has been in the cupboard too long. An additional half teaspoon of Baking Powder will usually help them out. I even dribble a little lemon juice in my pancakes...just to get the additional acid to activate the Baking Soda. Yes...both Baking Powder and Baking Soda in a pancake....You can do without...but it works better with. I just made some this morning...got them a little thin...mixed some more flour in and they rose great. Buttermilk adds acidity to pancakes too...so if you happen to have some Buttermilk, you should probably leave out the milk and use all Buttermilk. I like the tiny bit of vanilla extract flavoring too....some say even some almond extract.
