You need to go into Data Management > Delete > Delete Coverage. This will clear the "paint" on the map without disturbing field names and guidance lines you want to reuse. If you are tracking data, be sure to save it to a stick before deleting. Also, be aware, if you are saving data and you hit transfer all to the stick, if there is a large amount of data on the display, you will be there a while.
