A spring loaded catch, similar to the catch (with a notch in it) on the hood of a car?
Obviously would have to be heavier duty, but simple to make.
Push down on your pedal. When the table is up off the floor, the spring loaded catch holds the pedal in place.
When you want to lower it, push pedal back down and use the side of your foot to push the catch off the pedal?
Could rig up a finger operated release, with linkage, under the tabletop if the foot thing isn't acceptable?
Kinda redneck and "Rube Goldberg" engineering, but might work.
