Ham cured or fresh. Smoke the fresh ham

As far as the ribs.
I prefer making baby back ribs and then slicing the loin into 1/2" thick boneless pork chops. That way 4 fit into the pan and you don't have a stupid bone with a sliver of wasted meat everytime you cook it.
