What if you calibrated that 4.5 speed when doing 180 bushel corn vs the 250 I was in? Would the plate not be able to account for the increased flow?

The point of the calibration is to provide the system with some "known points" as references. Anywhere between known points has to be calculated via formulas, guesswork, magic, or whatever other methods the manufacturer uses. So if your high flow calibration was done at 180bu, it's very possible that it will not correctly "guess" what 250bu feels like, and therefore your readings will be off.
