Cori loads up another 1000 bananas, travels 400 miles and drops off another 200 bananas, and returns home
Cori loads up the last 1000 bananas, travels 400 miles picks up the 400 bananas she previously left, that will give her 1000 bananas to make the 600 mile travel, so in theory....she could deliver 400 bananas.

Edit: I guess KnowAFarmer beat me to it by one minute.....I guess my solution isn't optimal
