A little egg helps me a lot, with hamburger that has been frozen then thawed. And I don't mean meat from Wallyworld, I've got a freezer full that I know where the animal was walking around and butchered at local locker. I do think it might be better for burgers to take the ground beef fresh, make patties, then freeze them for later rather than putting 1-2 pound packages in the freezer.
