I think only #3 is a valid concern, and there are probably even more potential issues with an upgrade, like old software compatibility. But security-wise, you will be well ahead of the hackers game by using Windows 10.

1. It is not "lots of times", but extremely rare, especially for old software that are less likely to be affected by security and functional bug fixes on new features. The risk of getting your machine and personal data hacked by postponing the update for a few days is more important.

Real-time updates are not new with Windows 10, this has been the norm for years, so if there are such generic update bugs, you can expect software developers to be quite reactive to it, as they would have hundreds or thousands of customers affected by them. It might also be possible to roll back updates, as it is in previous versions. I trust Microsoft, software developers and users to find solutions to alleviate the risk of things going wrong. In any case, don't put too much faith in Microsoft or your software, but always have a good backup and restore plan so that you lose at most the work of the day or half day, with an easy way to fully restore your system and data.

2. If you are on a data plan on Windows Phone or a Microsoft Surface tablet, your connection is metered and updates will wait till you reach a WiFi hotspot. I expect the same of Windows 10 but I haven't looked it up.
