To start out I always say buy a pellet smoker or a electric one until you get the hang of it a little better. The pure wood offset smokers as well as all the ones like the barrel smokers that the internet has plans on can smoke sour stuff and the learning curve is kind of a bad thing unless you get the hang of it quick
