If you're doing it to make pulled pork, 160 won't be done. Cook it to at least 185 degrees for fall apart tenderness. It won't be dry if you cook it at 225. Smoke for at least 4 hours then wrap with foil and cook until internal temp reaches 185. Let rest for 30 minutes and the shred with two forks. Liquid in bottom of foil can be poured over shredded pork for added flavor.
