NW Iowa. / SW Arizona | I've never smoked a pork butt before but from what I've found out over the brief smoking I've tried I like to stay in the 180-200 range, and leaning more towards the lower end of that range. I'm afraid if you cook it that long at that temperature you will over cook it. Stick a meat thermometer in it and keep an eye on it. If it gets to the 160 degree range it should be about done. But like I said I've never smoked a pork butt before so take this advice with a grain of salt. Good luck and let us know how it turns out. | |
