Ive smoked ribs and briskets but tomorrow Im gonna try a pork butt. How do you normally smoke one? Im thinking fat side up for about 3-4 hours of smoke around 225 then wrap in foil and finish for another 3-4 hours at the same temp. Does this sound remotely okay?
Thinking of just putting a good spice rub on it for seasoning.
