I don't remember Easter weekend to have much impact on markets, other than things need to be wrapped up on Thursday.  It's good for ham sales though.
Grilling holidays such as Memorial Day and 4th of July tend to have more positive impact on beef markets, but more in the 2-3 weeks previous.
