How about a mercury switch, on a paddle, inside the tank? When the tank has product in it, the weight of the product holds the paddle down, when tank gets below minimum level the paddle pivots up and trips the mercury switch... Alternately if are set up for cams, just add a camera to the lid of your tank and visually confirm product is inside, it won't alert you to low level if you don't keep an eye on it though.
