Since we are on a low sodium diet, I buy 7-10# frozen pork belly from a local butcher. I saw it into 3 pieces. I will take a piece, thaw it out then hot smoke it after rubbing it with a home made rub. Store it in the fridge after smoking, slice or cube it up and fry it. It's usually gone in 3-4 days!
