For a 5 pound slab of belly

1/4 cup of kosher salt
1 tsp pink salt
Half cup of maple syrup, honey, or brown sugar (I make apple syrup by boiling down cider, and it's awesome for bacon)

Mix the dry ingredients together and rub evenly on the belly
Smear the sweet stuff on

Wrap in plastic wrap, put it in a pan (it will give off a lot of liquid), and refrigerate for a week. Turn it every day

After a week rinse it off and pat it dry.

Smoke it for a few hours with cool smoke, 200 degrees or less. It's easy to get it too smoky. More is definitely not better.

It is so much better than store-bought.
