Mark. I do my own wheat. The wheat I am using now is 4 years old. I have a 30 gallon drum that is sealed tight that I keep in the basement. It seems to keep really well in these conditions. It can grind roughly a pound per minute. I will attach a picture of the grinding mechanism. It is a little messy, but not too bad. Earplugs are a good idea because it is a little noisy.
