A router provides a connection between the outside world and your network.

A switch allows you to branch out your network and connects things on your network together.

A wireless access point (wap) connects to your network and provides a wifi signal.

The stuff you buy at bestbuy is usually a router, 4 port switch, and wireless access point in one. All you need here are wireless access points, a bunch of cat cable, and a switch to connect everything together.

I dont know anything about these beside that this is a popular brand and the data sheet for the outdoor models says -22 to 140 Fahrenheit. You'll have to check the data sheet for each model as the specs all differ slightly. It also looks like they are all POE (power over Ethernet) so you run power to them over the cat cable which saves a bunch of wiring nightmares. Youll just have a bunch of power injectors at your switch end to plug into a power bar.
