I remember my Grandparents making fresh sage sausage when we used to butcher on the farm 50+ years ago. It was a real treat for breakfast the next day. I also remember fried brain sandwiches for lunch on butchering day. The best thing was cracklins after pressing the lard out. Probably the reason for my heart trouble, but I loved it all.
