I just had a total replacement on one side and for that job I wouldn't recommend doing both although some do it. It's really a bear for me to put much weight on it. To have both knees that sore would really limit my getting around. Depends on how you tolerate pain and how many drugs you want to take. I'm not a big fan of dropping a lot of pills.
I would recommend doing what ever you can to build your leg muscles up well ahead of surgery and get or keep your weight down. I went ~ 75' and back on walker within 20 hours, the nurse who walked with me said "You must exercise". I said "Yup" She said it makes a big difference.
