12-14 days is sort of minumum to get some taste benefit. It's at that point that you start losing more water weight, so to sell there is less meat/weight and retailers wanna turn it over faster, but for taste 3 or 4 weeks+ but you may be approaching 20% weight loss. And I even see some high end restaurants with 40-50 days hung. That's getting extreme though.
