i agree about mutton, at our last nsip center of the nation sale. Cody Heimke with Niman Ranch served us some interesting meat. he had a couple legs and then also had some COLD mutton served cold. he said he took some legs off some old ewes into the locker and had them treat them just like a ham on a pig. it was absolutely awesome. I agree with everyone it needs to be prepared correctly. and yellow fat is really gamy tasting. have also read some studies that if you feed 20% forage in the ration it will greatly reduce gaminess.
