I don't eat lamb because it tastes like my neighbor smelled when I was growing up. He had a se of leather coveralls he wore in the sheep barn so covered in sheep grease they had the flexibility of a glad bag.

I had to stand there for hours turning the crank on that flexible shaft set of clippers while smelling his clothes, and then go inside for lunch and eat a hunk of meat off some well aged ram - yuck.

I think too many folks had bad experiences with mutton to ever pick any sort of mutton over other meats.

I think a lot of the problem is that too many people equate lamb with mutton. Of course the well aged ram is yuck. Same as a well aged bull would be yuck.

You want a nice hunk of meat, then get it off a young steer or wether that has been fed and processed properly, and harvested at the appropriate time.

Lamb will always gets a bum rap being unfairly compared to mutton. Same as your top steak from a corn fed steer would be compared to an old bull made into bologna.
