Subject: Why is beef so much more popular than lamb?

West Central Alberta Coldest, wettest edge

I was recently talking with a sheep farmer, and it seems that sheep are more efficient at converting feed to meat than a cow in every way. So what accident of history is it that caused us to mostly choose to raise cattle over sheep, at least in North America. Predators, fencing, milk, different meat?
