On my Iphone with 8.1.1 you still tap the contact and beside the phone number is a balloon and a phone symbol. tap the balloon and it takes you to a new message window. If you scroll down on the contact screen you should still see the "send message" "share contact" and "block caller" options. If the contact does not have a phone number only an e-mail you should still have the send message below.
I will check wife's IPad to make sure it is the same
