In the bath room I would forget about notching the plywood into the walls. Just line the walls with 3/4 inch plywood from about 30 inches off the floor to about 78 inches high. Then strap the top and bottom with 3/4 inch strapping and drywall over that. Then anywhere on the wall you can hang towel racks or more important grab bars and you know they will be fastened to something solid. For a few sheets of plywood it will save you patching a lot of drywall when you have to mount grab bars. Also consider using grab bars for towel racks. Then if you slip and grab them you get something solid.
Also make the doors all 36 inches wide, and at least one door at grade to allow wheelchairs or furniture dollies in (makes moving much easier)
