You can't change the legend in the View Program (that's only in Farm Works Mapping). However, you can select a point (or a group of points) and then change the tab at the bottom of the screen to the Information tab (blue circle with an "i" in it) and you can see the Min, Max, Avg and Std Dev of the selected points.
