When I hired into the job I have now it was pretty simple, x dollars an hour, all the time off I needed with fair notice (unpaid) no over time pay but as many hours as I wanted. Paid 1/2 hr for breakfast and paid hour for lunch. Anytime I would run to town for something one of my bosses (two brothers) would say "take my truck". I always felt uncomfortable using someone elses' truck but they didn't want me burning my own gas so they eventually told me to keep track of my mileage and paid me for that. Raises came fast in the beginning and continue to happen every 4-6 months, I offered to start at 7.50 while I was learning the ropes and I never got one check below 8.50 and I've gotten good Christmas bonuses every year.

If I were going to hire a guy I think a setup like this would work well, I'm certainly happy with it now
