My girlfriends parents live in Scottsdale (outer suburb of Phoenix) and she lived in Flagstaff for college. I've made 2 trips over to the US to visit her and really enjoyed my time in Arizona. Even though Phoenix is quite unique, it's just another city haha. Like what others have suggested, I'd recommend going through Sedona on your way to the grand canyon. It is a truly spectacular place, especially at sunset. I quite liked flagstaff as well but there isn't that much to do other than being a pretty town (pretty cold though). I found the agriculture quite interesting outside of phoenix. Some farm areas are Indian reservations. Hoover dam is great - I found it really interesting. I can't really remember the names of other places off the top of my head, but I'm sure you'll have plenty to keep yourself busy over the weekend
