OK, dealing with only what we know, which is obviously not a complete picture

Yeahman - It was on my fathers bin site and it was taken by my father. It was wheat and my dad has neither grown or bought wheat from anyone. He's admitted to it. ... I have found it and stopped the payment. The amount is more than 5000 and I am in Canada.
I see multiple issues in resolving this.  You say it is criminal.  That involves ... well I'm not sure in Canada. Here it would be the county State's Attorney.  The problem there will be proving it.  Your dad was selling grain from his bins.  There will need to be some way of proving it was not his grain.

Getting the grain back or getting paid for it is a civil issue.  Still back to proving anything.

Beyond that, if your Dad is stealing from you why are you in any way financially involved with him?
