Wife peels, cubes, and boils it then mashes it, and puts it in freezer containers that way. Thaw and season at the time of cooking. It will be thinner than mashed sweet potatoes, but the taste is nearly the same. I have also halved and roasted them followed by a mashing. Less water introduced that way.
