Anise and fennel both have a licorice taste and are often confused, even by the guys in the produce department of grocery stores. But fennel seeds are what are used in Italian sausage. The Italians also often eat the fennel bulb as a fresh or cooked vegetable. http://en.wikipedia.org/wiki/Fennel
