This is my wife's salsa, the cilantro can be omitted. She has lots of requests for it. She made 45 pints this year. it's very good.

Core and cut into quarters about 4 quarts of Roma tomatos, skins on
1 1/2 large onion, chopped
4 garlic cloves, minced
5 second shake of garlic salt
3-6 jalapenos, to desired hotness (leaving in the seeds makes it hotter)
5 turns of a pepper mill
3 tsp salt
Cilanto, to taste
1/8 cup apple cider vinegar
2 small cans tomato paste, to thicken 

  1. Bring all ingredients to a boil, stirring with a potato masher or something similar to break into smaller chunks.
  2. After it begins to boil, turn it down to a simmer.
  3. Simmer for a couple hours or more.
  4. Wash 8 pint jars and lids in the dishwasher.
  5. Take out the hot jars 1 at a time, so they stay hot.
  6. Ladle the salsa into jars, sealing them.  Make sure to clean off the tops, so they can seal.
  7. Process for 15 minutes.
  8. Put them on a double folded towel on the counter.
  9. Listen for them to ping.
  10. If they don't seal after a couple hours, put them in the refrigerator and eat it fresh!
