Green tomato relish
11/2 gal chopped
3 quarts onions
3 quarts bell peppers
1/2 gallon vinegar
1 pint hot jalopeno pepper
3/4 cup salt
8cups sugar
Chop green tomatoes first, place in enamel or stainless still pan pour salt over and let set while chopping onion and peppers. When everything is chopped pour salt water off and mash out liquid. Add all ingredients together and simmer slowly until peppers and tomatoes are tender and change color. DO NOT OVER COOK AND DON'T BOIL. Put in sterilized jars seal and water bath for 10 minutes at least half way up jar with water. Made a lot of this, this summer and ate a lot also. Great STUFF.
