Your thermostats (there are two and they are different) are turned way up or have welded contacts.

You can increase the storage efficiency of any electric water heater by enclosing it in insulation. They sell thin jackets for that, I used 3-1/2 plastic wrapped fiberglass and it works fine. I'd increase the wire size two gauges so it doesn't overheat with the extra insulation.

When the coop shuts off power you will keep the hot water for hours, more if you insulate the tank more (insulation is what makes the Marathon more efficient), but it you use it all and the power is off to control a peak, it won't recover until a while after power is back on to it. I think I'd want the 80 gallon tank with that control in place.
