I almost find that hard to believe that a good steer could be too fat.
Our Holsteins backs look like a sheet of plywood when we ship them and their isn't enough fat to worry about draining it off when we fry up ground beef. It's been a while since we did a Hereford but I don't remember them being any different.
so where does the prime beef end up
