i will sometimes coil the extra up in fairly long strips and stick it through the loop in the strap that the ratchet is attached to. when you tighten the strap down the loop pulls tight on the extra strap.
a trucker showed me how to coil the extra up under itself and let it wrap about about 1/4 turn around the ratchet on my semi flatbed. i haven't tried this with the regular ratchet straps but it might work.
