They're not hard to make, and now's the perfect time to do it while the weather's cool.

Get a fresh ham

Mix together:
1 pint salt
3 tablespoons brown sugar
2 tablespoons black pepper
1 teaspoon red pepper
1 teaspoon salt petre

rub it all over the ham, taking care to pack it in around the bone and any creases

Wrap the ham in brown paper, tie or tape to hold the paper on

Put it in a linen sack and hang it somewhere dark and unheated where the varmints can't get it.

Cut it down in 9 months, scrub it clean, and eat!
