The "acid roof" is largely dependent on how you apply your usually acid fertilizer.  If you keep spreading fertilizer on the surface it is not surprising the ph of the surface changes. If you get your fertilizer down, banded under the soil surface and move back and forth every year or two as in a strip till system there should be no "acid roof".
