I would make sure that ANY and ALL timber harvested is hauled to an open spot on your property and MEASURED before it is removed from your property.

Never sell on the stump.

Don't expect a state or county forester to represent YOUR interests.  Hire a private forester if you need someone to confirm the number of board feet of each species you are selling.  Sell it by the board foot.

Don't be influenced by a total dollar number, just get paid for what is removed. Don't let them cut anything under about 14" DBH.  Agree on what is to be done and where with the slash.
