Von, I went through this same process last year with a very good insulation man. He recommended open cell (breathes) in all 2x6 walls with a visqueen vapor barrier on the inside.  If they used closed cell (not permeable) they would never fill up the whole cavity and there would be a place for condensation and mold to form. They used closed cell for on concrete only with no other vapor barrier so moisture is not trapped.  Open cell to fill sill pockets and any odd spaces. Ceiling rafters were filled with open cell and visqueen vapor barrier on the inside. Flat ceilings over a hallway and garage are filled with R60 cellulose (maybe 4 ft thick?). All interior walls use 4" or 6" (depending on studs) fiberglass bats for sound proofing.

Results are much like Lawfarms. Amazing heat retention. Spray in foam also is great at sound proofing from outdoor sounds. An air to air heat exchanger and outside air is a must however. I think it is the building code.

I think this is very similar to Lawfarms new house.
